CST Evaluation For Sustainable Ecotourism

The concept of the "eco lodge" has evolved with the advent of certification processes by government and professional organizations. These certifications measure a wide variety of requirements and grade the eco lodge accordingly to how "eco" the lodge really is. It's no longer enough to just call yourself an eco lodge. Lodges to be truly "eco" must demonstrate this title they've chosen for their business by some measurable criteria.

Although the criteria used by these government and private organizations for certification vary somewhat the main theme seems to be consistent. They have expanded the idea of the eco lodge into the widely used term "Sustainability". A true Eco Lodge should not only be "eco friendly" but also contribute to the environment and the local culture/community.

We purchased Sabalo Lodge as an existing operation. It was always our intention to be "eco friendly". We have spent the last year and a half re-constructing almost the entire infrastructure from the top down. We relocate to the lodge as our permanent residence in November 2007. We still have some work to do before we fully meet the expanded requirements of what today's Eco Lodge is measured by. We have chosen Costa Rica's certification program as the measurable criteria for which we will be graded as to how "Eco" our lodge really is. The C.S.T. Program was developed by the Sustainability Programs Department of the Costa Rica Tourist Board and the Costa Rica National Accreditation Commission.

Below is the list of 153 requirements that are used by the CST to measure and rank not only the "eco" in our lodge but our "Sustainability" including our contributions to the environment and the local culture/community. We have color coded our answers to give you a better idea of what we have done so far and what we have left to do. The answers in "Green" are requirements completed. The answers in "Yellow" still need to be done. After we have settled into our new home at Sabalo Lodge in November we will be inviting the CST out for our initial inspection. We will work with them on what still needs to be done for our certification to be complete. A target date will be set for the final inspection and certification of the lodge after that initial visit.

1. Policies and programs

1.1 The hotel's negative environmental impacts are identified, monitored and kept on written
record.

This evaluation will be easier to identify once we physically locate to Sabalo Lodge in November of 2007. We will be working very hard to identify any negative impacts on the environment and will monitor these impacts while keeping written records and looking for ways to mitigate or eliminate any issues recorded.

 

1.2 Specific environmental mitigation plans have been designed by the hotel to deal with
negative environmental impacts or environmental accidents (emergencies).

Sabalo Lodge has one diesel generator that is used for back-up electrical power only. We have a robust solar electrical system in place for all our electrical needs. The generator is located in a secure bodega with an additional cinder block wall built around it to help mitigate noise.

We added a better oil drainage system to the generator to limit possible spillage as the original system was flawed. The generator although infrequently used, (mostly during rainy season when we do not have guests) is regularly monitored for any spills or leaks. There is a bucket with saw dust to absorb any spills which is then properly disposed of. Sabalo Lodge utilizes a small gas powered pump to fill its gravity fed water tanks. The pump is enclosed with a structure to help mitigate noise pollution. All gas storage tanks are stored in a secure bodega with a 2 foot high cement floor ensuring no gasoline can spill into the soil. All gas cans are within an additional plastic catch basin giving a second level of protection and ease of cleanup in the event any gas is spilled. A bucket of sawdust is nearby to help absorb any spill and properly disposed of. This area is frequently reviewed for any leaks or spills. Sabalo Lodge has an elaborate trenching system around the property so that the natural flow of water on the property (from high tides in the mangroves to excessive rain) is mitigated to prevent soil erosion without disrupting the natural flow of water.The main restroom facilities use a wet composting system where worms are used to breakdown waste material allowing for an environmentally friendly self cleaning system. There are two smaller North American standard septic tanks; each one accommodating a single sleeping area. These are less frequently used and monitored regularly for any leakage (although this is highly unlikely due to the standards that were used to build them and the fact that they are fairly new). Sabalo Lodge provides separate trash receptacles in every guest's rooms for: glass, paper, plastic and metal. No food is allowed in the guest's rooms eliminating the need for an organic trash receptacle. Additionally there is a centrally located covered trash bin for all non-recyclable material. Although we take initial steps to make sure all materials are properly separated we go the extra step of collecting all waste and sorting it in a safe area before transporting it to the town of Sierpe. Proper disposal is ensured as it is only transported by staff or owners of the lodge. All recyclables are dropped off at the recycling center in Sierpe which benefits the local school. Additional non-recyclable materials are taken to the next nearest town of Palmar Norte for proper disposal.

Since we are a smaller lodge all kitchen grease is easily collected and disposed of properly. We take great pride in our lodge and expand that pride beyond our borders to routinely police the areas and roads around the lodge to collect any litter on the ground and help keep roads clear of brush and debris.

Sabalo Lodge has completed the installation of it's grey water system. All grey water is routed to a small pond where the water is collected. Surrounding the pond are both banana plants and sweet potato vines. These plants are helpful in absorbing all the impurities in the water (we only use biodegradeable soaps and cleaners) without harming the quality of their fruit.

1.3 The hotel continuously participates in programs of environmental improvement of its
surrounding areas or other areas of the country.

Sabalo Lodge is continually striving to refine what we do so as to be a model for sustainable tourism. This includes leading by example for environmental improvements not only for us but within the local community of Sabalo as well.

Being new owners of Sabalo Lodge we have spent the last year and a half rebuilding the lodge to meet sustainable requirements strictly from a construction viewpoint. We ourselves will be locating to the lodge in November where we will live year round. There are many environmental programs in the area to choose from for us to participate. We will be reviewing our options and plan to be very active in the programs that prove to be near and dear to our hearts.

 

1.4 The hotel is a member of regional or local organizations that work on solving environmental and social programs.

There are no local organizations in our remote area that are working on solving environmental and social programs. We intend to be a leader in the area to help bring awareness and help on these important topics. We have taken initiative to handle some gross violations of the environment that we noticed during our many trips to the lodge during remodeling.

We found a local land owner that had a restaurant in the nearby town of Palmar Norte. In an effort to reduce his overhead and be more profitable he was illegally raising pigs and chickens in the area; about 50 pigs and 200 chickens. This was of course devastating to the local environment as he just let the waste from the pigs flow into a local meadow along with all the chicken waste that was accumulating threatening to pollute the stream near his property. We spent our own money, time and resources to assist the local health minister to shut down this operation. The area is now pig and chicken free and the environment is beginning the healing process.

We recently filed a denuncia (like a civil complaint) against another local land owner who is attempting to take possession of a small area of land that is public land. He also illegally cut down several cedar trees for his own personal profit. We will continue to police the area to protect the environment and the community especially where local organizations do not exist to address these issues.

The local community of Sabalo has never had an adequate drinking water system. We are working with the community and the previous owner of Sabalo Lodge, Nidia Gamboa Chavez to help the community of Sabalo with this issue. Nidia and myself, Dan Pesta, visited the water municipality in San Isidro (2 hours away from Sabalo) to get the proper paperwork and petitions to get the process started. I delivered the forms to the community where the petition drive has commenced and is almost complete. The next step is to deliver the petition and request to the water municipality in San Isidro as a group with an identified president, vice president, secretary and a few other posts. The community asked for my participation as part of the group that will present the petition and gave me an official post title on the submission form. I will lend my support and be there with the community when they submit their paperwork.

 

2. Emissions and wastes

2.1 The hotel strictly maintains and periodically registers the composition and quality of its
residual water (treated wastewater).

Sabalo Lodge has installed a grey water system just the gray water system as described at the bottom of section 1.2. All water is aborbed through banana and sweet potato vines surrounding the grey water pond. We still need to make contact with the Minister of Health to find out how to get the water tested.

2.2 The hotel has a certification of the quality of its residual water (treated wastewater) granted by the Department of Environmental Control of the Ministry of Health.

environment.

The main bathroom facilities utilize a wet composting solution for black water treatment. Worms are used to breakdown waste material creating a sustainable and self cleaning system. The two other septic tanks were built to North American standards and facilitate one room each minimizing usage and possibility of overflow or damage to the environment. These tanks are checked monthly for leakage. Because of infrequent use waste is broken down quickly eliminating the need for cleaning, (no possibility of overflow of waste).



2.4 The residual water is discharged without altering the environment.

2.5 The residual water is appropriately re-utilized (recycled).

lOur grey water system is set up to be a watering source for both banana's and sweet potato's both having root systems that filter the water.

 

2.6 The rainwater is managed and disposed using systems that do not alter the environment.

Water and rain water is plentiful in the Osa Peninsula so we do not participate in rain water collection. We utilize the natural slopes of the land to divert excess water off the property along with a trenching system so water flows are not disrupted. Trenches are kept clean so as not to have water backups creating unnatural congestion of water flows. This also helps eliminate any standing water on the property to reduce mosquito breeding grounds in the immediate area.



2.7 Any source of pollution located on the hotel's surrounding area is reported to appropriate government agencies.

2.8 Warning signs are used to identify contaminated areas.

We have a warning sign on our secure bodega where toxic materials such as paint, varnish and poisons are properly stored. We also safely transport the empty containers to Palmar Norte for proper disposal. This is done by staff or owners to ensure they reach the proper destination.

We also have a sign designating the building with the backup diesel generator and water pump making guests aware of their potential to noise pollution. We attempt whenever possible to use the lawnmower when guests are not at the lodge or away on tours.



2.9 The hotel actively participates on the "Ecological Blue Flag Program" for coastal zones.

Sabalo Lodge offers as a tour a trip to Playa Blanco a beautiful secluded stretch of beach at the mouth of the river where the Sierpe River meets Drake Bay. Our tour guide polices this stretch of beach and picks up and packs out all trash collected while our guests enjoy several hours of beach time. Our guests will also be encouraged to participate in collection trash they come across during their time at the beach.



3. Gardens

3.1 Native plants are predominately used on the hotel's gardens.

Sabalo Lodge has strictly adhered to a policy of landscaping with native species of plants only. We have added a number of native species to the property to enhance the beautification of the landscape and the education of native plant species for our guests.

gardens, to the surrounding environment.

We have no interest or intent to use non native species of plants for ornamental purposes. There are plenty of diverse native species available to us for our gardens.

We plan on implementing this after we move to the lodge in November. We have purchased some of the best field guides available, (recommended to us by a Corcovado guide) to help identify the trees on our property according to their local and scientific names.

We consulted a Corcovado guide on the best place in San Jose to buy field guides and reference books for the plants, trees, animals, birds, etc in the Osa Peninsula. We purchased a wide variety of reference books for our library so our guests can reference just about anything they find at Sabalo Lodge.

 

3.5 The hotel's gardens are maintained avoiding the use of fertilizers, pesticides and herbicides.

The environment of Sabalo Lodge has rich soil and plenty of rain water year round allowing for the growth of plants in our gardens without the need for any fertilizers, pesticides and herbicides. We grow native species of plants and fruits that thrive in this environment and avoid these unnecessary poisons.



4. Natural areas (National parks and protected areas)

4.1 The hotel promotes the visitation of natural areas among its customers.

Sabalo Lodge offers tours for our guests to Corcovado National Park, Drake Bay, Central America's largest mangrove preserve and both Violines and Caños islands. Sabalo Lodge is flanked by protected mangrove preserves and 10 acres of primary rain forest for our guests to explore as well to better understand the importance of these protected areas. We also include additional information on our website as well as guide books for reference in our library.

Another service we offer our guest pre and post arrival is travel recommendations to maximize their experience during their stay in Costa Rica. This includes recommendations to visit other natural areas throughout Costa Rica beyond what we offer as tours.



4.2 The hotel has detailed information about natural areas of interest for tourists.

Sabalo Lodge has a large variety of resource guide books in our library for most of the natural areas of interest in Costa Rica. We also have detailed information on our website about the protected areas in our general area. We are adding to this information on our website all the time including information about the types of wildlife endemic to these areas.



4.3 The hotel complies with the policies and laws establish to regulate tourism activities in
natural areas. It also communicates these regulations to its customers.

Sabalo Lodge owns 10 acres of primary rainforest adjacent to the lodge. In addition we are also adjacent to mangrove preserves.

 

4.5 The hotel's protected area is appropriately managed.

Sabalo Lodge is adjacent to the 10 acres of protected rainforest. There is a trench for water drainage as we are lowland rainforest and in a flood plane. The trenching allows the water from the high tides of the mangroves to be diverted from the property and properly managed without adverse effect to the environment. The trench is outside the boundary of the protected area and acts as a barrier against unauthorized hiking in this protected area. The lodge also acts as a buffer for illegal entry for logging, hunting or poaching of rare species of animals or plants.

There is one trail along the edge of this protected area for our guests to be able to experience the wonders of this beautiful environment and they are always accompanied by a staff member. We only accommodate twelve guests at a time which ensures that the area is never abused by heavy traffic.

 

4.6 The hotel participates in or supports the maintenance or management of a natural protected area (private or public).

Sabalo Lodge is fully responsible for the 10 acres of primary rainforest that it owns. We manage it by ensuring that there is no illegal access to the area thus leaving it undisturbed.



5. Protection of flora and fauna

5.1 The hotel implements specific actions to promote the no extraction of native flora or fauna by tourist or any other people.

Sabalo Lodge educates its guests on the importance of not extracting native flora and fauna. We do this by education and vigilant monitoring of our grounds and surrounding areas. We have this stated on our website and include it within the written policies provided to each of our guests in their rooms.



5.2 The hotel shows its resolution to prevent any commercialization of natural products (animals, plants, and their products) forbidden by law.

We have posted on our website as well as part of our guest orientation to explain these laws and the importance of adhering to these principles for the protection of these frail eco systems. This is also reinforced within the written policies provided to our guests within their rooms. We also ensure that anything we purchase for the lodge has proper permits and has not been illegally obtained.

Sabalo Lodge understands the importance of educating the children in the village in an effort to effectively instill these important ideas within the community. Where we might not be as successful to shift long held ideas of some adults we can help change the future by starting with the children. We plan on working with the local school teacher to build an effective curriculum and participate in the education of our local children. We will incorporate multi-media presentations, reward based projects, outdoor activities and artistic projects where they can show their creativity in how to contribute to these ideas.

 

5.3 The hotel does not maintain wild animals in captivity.

The owners of Sabalo Lodge are extreme animal lovers. That is one of the reasons we chose to live so close to nature. We will never maintain wild animals in captivity and we will police the community to make sure this isn't happening around us.

We do not allow feeding of the animals through artificial means. There are plenty of fruit trees and palm fruit enjoyed by many birds and several families of white faced monkeys that visit the lodge almost daily. Our guests have plenty of opportunity to see these animals up close feeding in their native setting without the need to attract these types of animals by leaving food out for them.

This topic is very near and dear to our hearts. We plan on making this a topic of discussion within the curriculum we will be building to help educate the local school children.



5.4 The hotel implements activities to prevent the artificial feeding of wild animals.

Sabalo Lodge has posted on its website as well as part of its orientation the importance of preventing artificial feeding of wild animals. We also include this in the written policies in every guest room. We have many fruit trees on our property where guests can see monkeys, birds and other wildlife feeding in a natural setting.



5.5 The hotel external illumination system does not produce alterations on the natural
environment or changes on wild animal behavior.

Sabalo Lodge and its cabins were built using traditional designs endemic to the area and the environment. They consist of low hanging roofs which redirect the light down to the ground around the perimeter of the building only. This prevents alterations to the natural environment and wild animal behavior. We also use low wattage fluorescent light bulbs throughout the lodge to minimize excessive light.

We also use solar powered LED path lights for the safety of our guests when walking at night. In an environment where there is no ambient light at night this does alter the natural environment. We have done the best that we can to minimize that change by the type of lighting we use and the design of our structures without sacrificing guest safety.



5.6 The hotel sources of noise are appropriately located or isolated to prevent alterations to the natural environment.

Sabalo Lodge is run on a robust solar electrical system. We have a diesel generator as a backup power source but it will mainly be used in the off season during extreme rainy season. We have a double wall enclosure designed to help minimize the sound of the generator for the rare times we have to use it.

We also have a small gas power pump that is used to fill the water tanks from our stream. The design is such that it only takes few minutes to fill the water tanks. We also have an enclosure around this pump to help minimize the sound.

Sabalo Lodge is situated on eight open acres with trees and grass. We use a power mower to cut the lawn but only cut small sections at a time to minimize excessive noise.

6. Formulation of policies

6.1 The hotel has established a sustainability mission and policies.

Sabalo Lodge has established an initial mission with many policies in place and more to follow. After the initial inspection of our lodge by CST for certification is done we will re-evaluate both mission and policies. We feel CST's input is very important and we do not want to assume anything about these important aspects without their input first.



6.2 The hotel has prepared a brochure to publish the goals of its sustainability policies.

These policies are for the education of not only our guests but for anyone to consider that might read them when visiting our website. We hope our policies inspire others to see how they too can live more sustainable and help heal our environment.


6.3 The employees know the goals of the hotel's sustainability mission and policies.

The previous owner of Sabalo Lodge was very environmentally conscious and a pioneer of the eco lodge model in the Osa Peninsula (in operation for ten years before we purchased it). She has trained our caretaker, her brother, very well on these principles and also taught ecological principles to the local school children in the village of Sabalo. There are additional things to be taught as new ideas have evolved on this subject since that time. Once our mission and policies are solidified our caretaker will be well versed in these matters.



6.4 The hotel has designed a manual that defines the goal of its sustainability plan and describes its sustainability programs.

7. Water consumption

7.1 The water consumption is periodically monitored.

The water usage is monitored and logged both daily and weekly when guests are at the lodge.



7.2 The hotel keeps a record of total water consumption.

Sabalo Lodge logs how many times our two water storage tanks need to filled daily and weekly and averages are calculated from these numbers. These are logged in a book and evaluated for any anomalies against what is judged normal usage. By looking at both daily numbers and weekly averages we can gauge our efficiency of water usage and look for ways to make reductions when needed.



7.3 The hotel has a water usage plan with specific saving goals.

Sabalo Lodge has low water usage toilets installed in the lodge. We also encourage our guests to use the water in the shower for initial rinse and final rinse turning off the water as they wash. The nature of our water system (a gravity fed system) maintains a slower feed of the water through the pipes. This too helps in the conservation of water. Adequate water pressure is provided to our guests where over pressure could be considered wasteful.

Guests are asked to participate by having the laundering of towels and sheets done every third day. We provide the two guests cabins with additional clothes lines to help dry towels and air out sheets if they find it necessary (upon request laundry can be done more regularly).

We also continually check for any leaks or need to replace washers in faucets.

We will be monitoring water usage during our first season to make benchmarks for water savings goals.



7.4 A person is responsible for the execution of scheduled water saving activities. This schedule is known by all the employees.

We keep a log every time the water storage tanks need to be refilled. A weekly analysis is done against number of quests to determine an average on how well we are doing with our water savings policies. Based on our results we continue to look at ways to stay within an acceptable water consumption level based on a per quests average. The owner of the lodge is responsible for the monitoring of this activity.

These numbers will have to be developed and refined during our first full season in operation.



7.5 Water saving by employees and customers is encouraged by a permanent promotion
program.

7.6 Water leakage problems are periodically monitored and the hotel keeps a record of location and repairs.

We continually check on a bi-weekly basis for any leaks or need to replace washers in faucets or breaks in pipes. Detailed records are kept of what repairs are done and in what location.



7.7 The hotel uses faucet water saving devises.

Sabalo Lodge water is distributed using a gravity feed system. This allows for a slower flow of water through all faucets and showers acting as a faucet saving device throughout the lodge and cabins while still providing our guests with adequate water pressure for their needs. We also use low water usage toilets.



7.8 At least every two months, an independent laboratory monitors the quality of drinking water quality and ice used by the hotel.

Currently Sabalo Lodge provides its guests with bottled water in 5 gallon water bottles eliminating the need for testing. We are currently working with the village of Sabalo to get a community water system in place from a fresh spring in the mountains. Once that is in place we will be regularly monitoring the quality of the water with a lab.



7.9 The swimming pool water quality is periodically monitored. The hotel keeps record of this process.

Sabalo Lodge does not have a pool. We have a beautiful fresh water stream that goes thought the property and makes for a nice wading area to cool off and relax during the hotter parts of the day. Many of our guests prefer a quick rinse in the stream instead of using a shower which also helps conserve on water consumption. Our guests know not to wash in the stream with soap.

8. Energy consumption.

Sabalo Lodge can very easily monitor its water consumption based on how often our two water tanks need to be filled. If we find an excessive need to fill the tanks we re-advise our guests to our water policies that were presented in their orientation (also posted on the Internet) and ask for their cooperation. This is calculated by the number of times tanks are filled divided by the number of guests. This allows us to determine an acceptable average based on guests capacity.



8.2 The hotel keeps a record of monthly total energy consumption. The energy usage is
statistically analyzed.

Sabalo Lodge has a robust solar electrical system with a computer that monitors many different statistics allowing us to record energy consumption very accurately. We will be logging these statistics in an effort to continually look for ways to minimize our energy consumption. We also monitor the amount of gas we use in an effort to look for ways to reduce our carbon footprint.



8.3 The hotel has an energy usage plan with specific saving goals.

This plan will be developed during our first year in business. We will be monitoring our energy consumption in an effort to better understand our basic needs and how we can better implement a viable energy usage plan and set appropriate saving goals.

Currently Sabalo lodge has limited the number of electrical outlets so we can manage the electrical usage. We have installed low wattage florescent light bulbs throughout the lodge and cabins. We have a timer switch on our small energy efficient refrigerator so that it does not run at night when it's not necessary. We have a stainless steel cooler that we load with ice when additional cool storage is needed.

Sabalo Lodge has adhered to traditional building styles germane to the culture and the environment. All living spaces consist of walls that are 50% wood and 50% open screen (3 walls in the cabins and most rooms in the lodge no glass windows). This allows for enough natural illumination within the living spaces so no artificial light is necessary during the day.

We have also implemented where we can the use of clear plastic roofing material to add natural light through the ceilings of some structures.



8.6 The hotel has a program of preventive maintenance for all electric installations and
equipment.

Sabalo Lodge spared no expense in its electrical installations. The whole lodge was rewired from top to bottom using protective insulation for all wiring and quality grade wiring. Outlets exposed to outside weather conditions have protective covers over the outlets. Lightning rods ground every structure and lightning dissipaters protect the main solar computer. All electrical equipment and devices are appropriately stored to protect against the extreme environment. Plugs are checked for corrosion and cords for breaks or tears. Sensitive electronics are stored in a dry room to prevent possible electrical fires due to moisture build up.



8.7 The hotel promotes the turning off illumination systems whenever they are not necessary.

Sabalo Lodge has little signs near light switches reminding guests to turn off the lights when not in use. This policy is also presented on our website and part of guest orientation. This is also included in the written policies in each guests room. All light switches have a tiny very low wattage red LED light so guests can easily find the light switch in the dark. This too eliminates the need to leave the lights on at night.



8.8 An energy-efficient illumination system in at least 80% of the hotel facilities.

Sabalo Lodge has installed 100% energy efficient florescent bulbs for all our lighting needs. We have also limited the number of bulbs per area so no excessive use of illumination is required or abused.



8.9 The hotel uses new technologies for energy saving. For instance, automatic switches for
illumination systems and electric/electronic equipment.

Sabalo Lodge as part of its robust solar system has a computer that maximizes the efficiency of the overall energy system. We use 100% low wattage florescent light bulbs and LED switches allowing the guests to see the light switch in the dark eliminating the need to leave the light on at night when the room is unattended. All switches were installed by the doors as well so they can be easily found in the dark. We also have a timer switch on our refrigerator that turns it off at night when it does not need to be running.

We upgraded the modem for our Internet system eliminating the old modem that had a fan running 24/7 (this eliminated the noise factor as well). All electronics are energy star compliant including our ceiling fans.

We also have low wattage rechargeable LED flashlights for our guests to use if they need a flashlight. This eliminates the use of inefficient high wattage disposable battery flashlights as replacements.



8.10 The hotel is using alternative energy systems (i.e. solar energy) for illumination.

Sabalo Lodge is proud of the fact that it runs on 100% Solar Electricity. Our location is very remote and off the electrical grid. We also have purchased and are still looking at the best way to implement a unique hydro unit that has the potential to work in our stream. This is a small unobtrusive device that is usually used behind research boats to provide them with additional power. We have some challenges to get it to work (like how to avoid having a stray log take it out). If successful it will provide us with the additional energy we need eliminating the need for a diesel generator to be used during the rainiest parts of the year in September and October.



8.11 The hotel is using alternative energy systems (i.e. solar energy) for water heating or other energy needs.

Sabalo Lodge does not utilize hot water. We are in a location that is close to 100% humidity, the real jungle. Guests will quickly realize that hot water is unnecessary for showers and will appreciate the refreshing cool water. All our electrical needs are provided by solar power.

Sabalo Lodge was designed using native cultural designs germane to this area and environment. Living areas consist of walls that are 50% tropical hardwoods and 50% screens. This allows for natural ventilation and reduces moisture build up in the living areas due to humidity. This design also allows breezes to flow easily within the living space creating a refreshing and comfortable environment. Low wattage ceiling fans are utilized in common areas and the kitchen where temperatures can be better regulated. All living areas have low over hanging roofs to protect from rain and provide more than adequate shade keeping the living space cool. A 400 square foot rancho also provides an additional outside area for guests to relax in a cool environment. This has eliminated the need for any air conditioning making us 100% compliant with natural ventilation.

 

8.14 The hotel uses new technologies to increase the energy efficiency of the refrigeration and air conditioning systems.

Sabalo Lodge by its very design has eliminated the need for artificial air conditioning systems. Low wattage ceiling fans are used in common areas and the kitchen. Sabalo Lodge utilizes a very small refrigerator limiting the amount of electricity used. We also utilize a timer switch that turns off the refrigerator at night when it does not need to be running. We have an additional large stainless steel cooler that utilizes ice for keeping food fresh when the refrigerator's capacity has been maximized.

 

8.15 The hotel has a program to control the leakage of air and other gases from the refrigeration and air conditioning systems.

Sabalo Lodge's management does safety checks to make sure there are no leeks in its new refrigerator. Seals around the fridge are maintained with silicon spray to keep them pliable so no cold air leeks out (humid weather can break down rubber quickly if not maintained this way). Hoses and components are checked on a regular basis behind the fridge to ensure no leaks. The fridge can be easily repaired in the near by town of Palmar Norte if such leaks are detected.



8.16 Energy efficient electric equipment is used to cover at least 50% of the hotel's needs.

Sabalo Lodge runs off 100% solar electricity so it is mandatory that we run efficient electrical equipment. We run 100% efficient electrical equipment. All lighting is 100% low wattage fluorescent light bulbs. Ceiling fans are low wattage and energy star compliant. All electronics are energy star compliant. We even upgraded the modem for our satellite Internet system to a low wattage unit that does not require a fan to be run for cooling. We have a very low wattage small refrigerator and use a stainless steel cooler with ice for additional refrigeration needs.

 

8.17 The laundry takes advantage of solar heat to dry clothes, sheets, and towels.

Sabalo Lodge dries all it laundry utilizing solar heat only (clothes lines). There is a main area for the lodge laundry and each cabin has additional clothes lines for their personal needs. Our laundry machine is simple, small and energy efficient. There is an additional basket in the laundry machine that spins dry the clothes. We do not make use of an actual clothes dryer.



9. General supplies consumption

9.1 The hotel has a supplies' buying and consumption policy that incorporates environmental and social aspects.

Sabalo Lodge practices buying and consumption policies that incorporate environmental and social aspects.

Sabalo Lodge buys organic unpackaged foods as much as possible. We practice buying additional foods in bulk and in recyclable packaging when possible. We also separate recyclable packing and transport it back to the town of Sierpe to the recycling center there that benefits the local school.

All soaps for personal use and shampoos are liquid biodegradable and dispensed from permanent dispenser in showers and hand pumps by sinks. This eliminates the waste of packaging for these items had they been provided in bar form or small bottles.

All dish washing soap and laundry soap is biodegradable and purchased in bulk and packaged in recyclable material.

Sabalo Lodge makes purchases from local merchants when possible. We are in a very remote location with the nearest stores being in the town of Sierpe. We have however found an incredible source for the best organic fruit and indigenous vegetables this side of the Osa Peninsula. This farm is so amazing that we even offer it as a tour to our guests. We also utilize the local fisherman in the village of Sabalo for all our fish purchases (the best red snapper and snook you ever tasted). We buy organic eggs and chickens from the village of Sabalo and are now sourcing the possibility of purchasing organic rice and beans as well. Sabalo Lodge does its best to incorporate traditional meals and ingredients germane to the area. We also attempt to make creative dishes utilizing local ingredients like whole wheat mango pancakes and Thai dishes like vegetable pad thai noodles.

Sabalo Lodge has a project to utilize land on the property adjacent to ours which is owned by our caretaker. In the future we hope to be planting our own organic foods like beans, rice, yucca, sweet potatoes, papaya and any other easily grown indigenous fruits and vegetables.

 

9.2 The employees know the standards established by the buying policy.

Our employees understand the importance and principles for these types of buying practices. They helped us source the organic fruit farm and established the relationship with the local fisherman. Our caretaker is allowing us to also utilize a portion of his land to grow additional organic fruits and vegetables. They also understand the importance of sustainable purchases such as buying in bulk, eco friendly products that are packaged in recyclable materials when possible.



9.3 The hotel has a suppliers' manual to guarantee their compliance with the buying policy's
social and environmental standards.

Sabalo Lodge owners make all the final decisions on the buyers that we purchase from. We have personally met with each supplier or investigated the products we buy to make sure they are truly organic or environmental friendly. We have a list of buyers and contact information in our computer along with the manufacturers' names of our preferred products. We continue to research additional products that we can add to our ever growing list.

 

9.4 The hotel does not use or sell products that are harmful for the environment.

Unfortunately given the very definition of sustainability and the design and building materials used for the lodge and cabins comes with a trade off. We used tropical hardwoods and even though the outside of the wood is protected with varnish we did not seal the inside of these structures, (an unnecessary use of toxic material). Even if we had we are located in the heart of nature and termites will always be a problem no matter how the wood is sealed. That said we do use an insecticide to prevent damage to these structures. We have research natural products to do the same job but none to date have proven effective. We will continue to research this matter in the hope that a product will become available in the future.

 

9.5 At least 50% of the printed material used by the hotel is made with free chloride recycled
paper.

Food and beverages

9.6 The food is prepared using preferably fresh products.

Sabalo Lodge utilizes as much indigenous food as possible, fruit, vegetables, eggs, fish, chicken, etc. ensuring fresh products. We also have organic food not indigenous to the area brought in to expand on our fresh food offering from the town of San Isidro. This farming enclave is renowned in Costa Rica for its quality and variety of organic produce.



9.7 The hotel certified organic food products.

Sabalo Lodge has a bounty of organic food available to us in our immediate area, (see 9.6 above). We also have additional organic food brought in from San Isidro, a farming community that is well known for its wonderful variety of organic foods. Additionally we purchase Bioland products, an organic food supplier in Costa Rica.



9.8 The hotel menu offers national or regional dishes.

Sabalo Lodge offers both regional and national dishes as well as creative dishes not regional yet utilizing regional and national ingredients. Thai food as an example that utilizes many ingredients found in Costa Rica.

 

9.9 The "canned" food bought by the hotel is acquired in "full" (industrial) size containers that are preferable made of glass or recyclable steel.

Sabalo Lodge makes a great effort to comply with buying canned foods in large containers and or glass or recyclable steel. This can be a challenge when sourcing organic foods but we do our best to comply whenever possible and continue to look for sources of these products in an effort to be even more compliant.



9.10 The reuse or recycling of containers is a standard practice. The hotel also has specific
suppliers of recycling services.

Sabalo Lodge practices 100% recycling. We are a small lodge so we do not create a lot of waste. We separate all our recyclables and take them into the town of Sierpe. They have a recycling center there that benefits the local school.

Sabalo Lodge also hopes that in the future we can figure out the logistics to expand this program to include transporting the recyclables of the small village of Sabalo to Sierpe as well. Currently all recyclable trash is being buried in personal landfills.



9.11Butter, sauces, sugar, honey and fruit jelly are served on reusable containers.

Sabalo Lodge serves all these items in reusable containers avoiding the need for small packets that only increase unnecessary waste products like packaging of small sugar packets or individual plastic jelly containers.

Sabalo Lodge only serves its food and beverages in reusable dishes, glasses, cups etc. There are no plastic or styrofoam eating utensils to be found at our lodge. Yes, we do a lot of dishes ;-)

Sabalo Lodge adheres to a strict policy of using non-toxic, non-corrosive biodegradable cleaning products. All laundry and dish soap is biodegradable. All soaps for personal cleaning and shampoos are biodegradable. We us a mixture of vodka and water as a disinfectant (alcohol is used in hospitals as well for this purpose) instead of industrial cleaners.

Sabalo Lodge continues to research ideas for other types of organic and environmental friendly cleaning products.



9.14 The detergents used by the laundry and kitchen are phosphate and bleaching free.

10. Management of solid wastes

10.1 The quantity and quality of solid wastes is continuously monitored.

Sabalo Lodge checks all trash receptacles daily so that there is never a problem with overflowing trash. Items are taken to a specific sorting area to ensure proper recycling and disposal. We transport all solid waste to Sierpe where all recyclable materials are dropped off at the local recycling center. Other solid waste is transported to Palmar Norte for proper disposal. We monitor the amount of solid waste we transport by load. This allows us to evaluate how we can better streamline our purchases to minimize solid waste in the future.



10.2 There is record of the production of wastes by room or hotel section.

Sabalo Lodge given its size will record the production of waste as a whole. This will be broken up into sections based on types of waste; glass, metal, paper and non-recyclable material. We will monitor these loads by trash bag and keep track of quantity taken out so as to better understand what we produce in waste and how we can better limit this waste.

10.3 The hotel has solid waste reduction plan with specific goals.

Sabalo Lodge's sustainable buying practices are its solid waste reduction plan. Buying fresh food whenever possible, buying bulk and buying packages that are recyclable. We will continue to monitor the amount of waste produced and will always look for better products that meet these needs. We hope to be an example for our guests that they may look to implement similar ideas when they return home.

Sabalo Lodge has separate containers for organic solid waste. All food scraps from meals are separated from fruit and vegetable scraps and used by our general manager for his livestock and dogs.
